It’s a classic combo, meat and veg on skewers. You can’t beat a good old crowd pleaser, and this beef skewer recipe is just that.
The reason this dish works so well is because of the ease and speed of cooking. There is very little fuss, and the ingredients are easy to find anywhere.
The sirloin works incredibly well because it stays tender (if you don’t overcook it). The marinade is simple, a mix of olive oil, garlic, rosemary, thyme, smoked paprika, cumin, and some salt and pepper. Easy to make and big on flavor.
A key step is to let the meat rest in the marinade for at least 30 minutes. Longer is better, but even the short soak gives it a little more bite. Consider adding peppers or chili to make it spicy, and use more veg to stretch out the recipe further.

Marinaded Beef Skewer Ingredients
- 1.5 pounds beef sirloin, cut into 1.5-inch cubes (700g)
- 1/4 cup olive oil (60ml)
- 3 cloves garlic, minced
- 1 tablespoon fresh rosemary, chopped (15ml)
- 1 tablespoon fresh thyme leaves (15ml)
- 1 teaspoon smoked paprika (5ml)
- 1 teaspoon ground cumin (5ml)
- Salt and freshly ground black pepper to taste
- 1 red bell pepper, cut into chunks
- 1 yellow bell pepper, cut into chunks
- 1 red onion, cut into chunks
- 1 zucchini, sliced into rounds
Marinaded Beef Skewer Instructions
- Stir olive oil, garlic, rosemary, thyme, smoked paprika, cumin, salt, and pepper in a bowl until it looks well mixed.
- Add the beef cubes and toss until everything is coated. Cover and refrigerate for at least 30 minutes, up to 2 hours if you’ve got the time.
- Using wooden skewers, soak them in water for 10 minutes so they don’t burn. Metal skewers can skip this step.
- Heat the grill or grill pan to medium-high.
- Thread beef onto skewers, alternating with bell peppers, onion, and zucchini. Keep pieces close, but not jammed together.
- Grill for 3 to 4 minutes per side, until the beef reaches your preferred doneness and the vegetables get a little char.
- Rest the skewers 2 to 3 minutes, then serve.
