Ingredients

  • 1 cup of shredded wheat cereal (such as Post Original Spoon Size Shredded Wheat)
  • 1 cup of mixed dried fruits (e.g., raisins, sultanas)
  • 1 cup of light brown sugar
  • 1 cup of milk
  • 1 cup of self-rising flour

Instructions

  1. In a mixing bowl, combine the shredded wheat cereal, mixed dried fruits, light brown sugar, and milk. Mix thoroughly to ensure the cereal and fruits are well-coated.
  2. Allow the mixture to sit and soak for about 1 hour. This softens the cereal and plumps up the dried fruits.
  3. After soaking, add the self-rising flour to the mixture. Stir well until all ingredients are fully incorporated, forming a consistent batter.
  4. Grease and line a loaf pan with parchment paper to prevent sticking.
  5. Pour the batter into the prepared loaf pan. Bake in a preheated oven at 350 degrees for approximately 1.5 hours, or until a toothpick inserted into the center comes out clean. Baking times may vary depending on oven types and the specific pan used.
  6. Once baked, remove the cake from the oven and allow it to cool in the pan for about 10 minutes. Then, transfer it to a wire rack to cool completely before slicing and serving.
