Step 1: 1. Boil the potatoes and when they’re nearly done heat the oil in a pan. Begin to fry the onion and courgette.
Step 2: 2. Drain the potatoes and put to one side.
Step 3: 3. Once the onions and courgettes have softened add the tomatoes.
Step 4: 4. Stir in the potatoes, balsamic and horseradish and cook for about 1 minute.
