Step 1:

  • 1. Boil the potatoes and when they’re nearly done heat the oil in a pan. Begin to fry the onion and courgette.
  • Step 2:

  • 2. Drain the potatoes and put to one side.
  • Step 3:

  • 3. Once the onions and courgettes have softened add the tomatoes.
  • Step 4:

  • 4. Stir in the potatoes, balsamic and horseradish and cook for about 1 minute.
