Sweet Rice Cake Ingredients

  • 2 cups of glutinous rice flour
  • 1 cup of granulated sugar
  • 1 and 3/4 cups of water
  • 1 teaspoon of vanilla extract
  • Pinch of salt
  • Optional: 1/4 cup of sweetened red bean paste or fruit jam for filling

Sweet Rice Cake Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the 2 cups of glutinous rice flour and 1 cup of granulated sugar.
  3. Mix well until they are thoroughly combined.
  4. Add the 1 and 3/4 cups of water into the dry ingredients while stirring. Do this slowly, mixing to avoid any lumps in the batter.
  5. Add 1 teaspoon of vanilla extract and a pinch of salt to the batter.
  6. Continue mixing until the batter is smooth.
  7. If using a filling like jam, spread a thin layer on the bottom of a greased 8×8 inch baking dish.
  8. Pour the batter evenly into the prepared baking dish. Make sure it is spread out smoothly using a spatula.
  9. Place the baking dish in the preheated oven.
  10. Bake for 60 minutes or until the cake is firm and a toothpick inserted in the center comes out clean.
  11. Once baked, remove the dish from the oven and let it cool on a wire rack for at least 20 minutes before slicing. This allows the cake to set properly.
  12. Slice the cake into squares.
