Fried Pork Chops with Creamy Gravy Ingredients

  • 4 pork chops (1/2 inch thick)
  • 1.5 cups of all-purpose flour (divided)
  • 1 tsp of garlic powder
  • 1 tsp onion powder
  • 1.5 tsp of kosher salt (divided)
  • 1 tsp of black pepper (divided)
  • 2 large eggs
  • 1/4 cup of whole milk
  • 1.5 cups of vegetable oil (for frying)
  • 2 tbsp of unsalted butter
  • 2 cups of whole milk (for gravy)
  • 1/4 tsp of cayenne pepper (optional)

Fried Pork Chops with Creamy Gravy Instructions

  1. Place the pork chops between sheets of plastic wrap and gently pound them with a meat mallet until they are about 1/4 inch thick.
  2. Pat them dry with paper towels before breading. 
  3. Set up three dredging stations. In the first shallow dish, mix 1 cup of the flour with the garlic powder, onion powder, 1 teaspoon of salt, and 1/2 teaspoon of black pepper. In the second dish, whisk together the eggs and 1/4 cup of milk. Put the remaining 1/2 cup of flour in a third dish. 
  4. Coat each pork chop in the seasoned flour first, then dip it into the egg mixture, and finish by coating it in the plain flour.
  5. Press the coating on gently so it sticks well, then let the chops rest for 5 minutes. 
  6. Heat the oil in a skillet to 350°F.
  7. Fry 2 pork chops at a time for 4 minutes per side, or until they are golden brown and cooked through.
  8. Transfer them to a wire rack to drain.
  9. Carefully pour off all but 2 tablespoons of oil from the skillet. Add the butter and melt it over medium heat.
  10. Whisk in 2 tablespoons of the reserved seasoned flour and cook for about 1 minute, until a light roux forms. 
  11. Slowly whisk in the 2 cups of milk. Continue cooking for 7 minutes, stirring often, until the gravy thickens.
  12. Stir in the remaining 1/2 teaspoon of salt, the remaining 1/2 teaspoon of black pepper, and the cayenne pepper. Taste and adjust the seasoning as needed. 
  13. Serve the pork chops hot with the creamy gravy spooned over the top.
