In a medium, microwave-safe bowl, whisk together the mochiko, granulated sugar, matcha powder, and freeze-dried strawberry powder.


Add water to the dry ingredients and whisk until the mixture is smooth and well combined.


Cover the bowl with a microwave-safe plate that is slightly larger than the bowl. Microwave the mochi mixture for 1 minute, then remove it from the microwave, stir with a wet spatula, and return it to the microwave. Repeat this process two more times, for a total of three 1-minute microwaving sessions. The mixture will become slightly translucent as it cooks. Allow the mochi to cool.



While the mochi is cooling, peel the mangoes and remove the flesh from the pit, slicing them into strips. Set aside.



Dust your work surface with toasted mochiko or cornstarch to prevent sticking. Transfer the cooled mochi to the work surface and dust the top of the mochi with more toasted mochiko or cornstarch.


Divide the mochi into two equal portions.



Using a rolling pin, roll out each portion of mochi to create thin layers, approximately 1/8-inch in thickness. If the mochi sticks to the rolling pin, add more toasted mochiko or cornstarch as needed.



Place slices of mango in the center of each rolled-out mochi layer.



Gently wrap the mochi around the mango slices, using your fingers to pinch the seams of the mochi and create a seal.
